Today I decide to do some Italian cooking....move over Olive Garden make way for Lei Lei's Cuisine!!!!
This is my version of Alfredo made from scratch.
1. Saute mushrooms then add butter, cream, cheese and seasons to taste.
2. I cook both my shrimp and chicken separate and add to each person's plate.
3. I used 100% Whole Wheat pasta.
I forgot to take the finish product pictures.....lol I was so ready to eat by the end I just forgot!

Today I decided to practice covering a cake with fondant. It was not an easy task for me. I still have not got it down pack but I was successful in getting it on and smoothed out. I decide to do a black and pink cake. The board and the cake are covered in black fondant. The bear and dots are covered in bubble gum flavored hot pink fondant.

Today I am going to do some experimenting with some new cake decorating stuff I got a couple of weeks ago.....I am excite about using them...although may need to watch a couple of you tube videos.....My decorating classes were so long ago.

Ok so I got a wild hair tonight and made chocolate cupcakes with butter cream icing. Then I decided to make some Chocolate Chip cookies made with European butter and my new favorite baking flour King Arthur! This is the second time I have used this particular recipe and I am sold it will be the only one I will ever use! As my son would say Omg!!!

Well it has been a busy week for me. My main job Registered Nurse has not allowed me any room for baking this week. I have to fill two orders this coming week. Plus going with my family to a water park Friday. I also am trying to put together a few events that are coming up soon. I will keep you posted.

Patterson Cookout
Well Saturday's cookout was a success although I got frantic when it appeared there was no help for me in sight. My son (the employee) went out of town...my other help ran into unforeseeable delay...my husband ended up being in a aau tournament at the last minute (Go Carolina Predators !).....But there is nothing like family...in the end it was good times, good food and a blessed family gathering. When is the next event.....um just not sure about that.

Here is cake number 2 with my Cricuit Cake Cutter. The "L" came out nice but I looped a little more. You do have to let the fondant sit in the freezer for at least 15mins so it comes off smoothly. The flowers are from gumpaste makers.....The string on this cake was off but I have ordered a new tool that should help me get the look i am looking for!

Cricut Cake Experiment 101
So got my cricut cake out the box Sat. lost the screw to the blade Icing sheet #1 messed up. Left kitchen to regroup......found screw in box...Thank you God!....Then later set machine up again....cut designs so nicely except it didn't cut all the way thru...Icing sheet #2 messed up...........So I tried the third sheet...ended up having to go with a very basic design! I am disappointed....will try something different 2moro....going to watch a demonstration at Michael's!

Back up for Biz!
After much prayer and thought I have started to once again start back baking and cooking. I have gotten so many request that I thought to myself why am I avoiding Lei Lei's???
I am excited to say that just in the past four days I have had an overwhelming response!
I am going to start taking pictures an uploading them to my flickr.com/leileis account. I think that I will have have a wedding cake to post in the next month!!!

Hey all!
I have been busy busy busy! Since I got back from my anniversary trip I have been slammed with Lei Lei biz and I am not complaining I love it. I have made two dinners that I need to upload pics of.
Lei Lei's Home style Lasagna and Lei Lei's Chicken Marsala's with smashed Parmesan potatoes.
I have also made a Italian Tiramisu cheesecake.

This is my Italian Cream Cake. I used European Butter, Mexican Vanilla and and sweeten coconut flakes with toasted chopped pecans. Then I put fresh cream cheese icing with toasted chopped pecans and coconut flakes. I got very very good comments from all my taste testers! This is a definite keeper.
